They're "nacho" ordinary plate of sharable goodness. Keto Bell Pepper Nachos are a delicious way to enjoy nachos on a low carb diet. Mini bell peppers are the perfect "chip" for layering seasoned ground beef, melty cheese, and all the tasty toppings you can pile on.

1 lb mini bell peppers 1 tablespoon olive oil 1 medium yellow onion, diced 1 lb ground beef 3 tablespoon tomato paste ¼ cup taco seasoning 1 cup beef broth ½ cup sharp cheddar cheese, shredded ½ cup monterey jack cheese, shredded Toppings! chopped tomatoes diced avocado chopped cilantro sliced jalapeños sour cream

prep the peppers

Slice mini peppers in half, then remove the seeds and ribs. Arrange in a single layer on a parchment lined baking sheet.

cook beef & onions

Saute ground beef and onions in a skillet until beef is no longer pink and onions are translucent, about 10 minutes.

Add the taco seasoning and tomato paste, then deglaze with beef broth. Saute another 5 minutes to thicken, then remove from heat.

Divide seasoned ground beef evenly between peppers.

Sprinkle the shredded cheeses over each nacho.

Bake in a 375°F oven for 10 minutes, or until the cheese is melted and peppers soften.
